Oven Roasted Frozen Broccoli

Ingredients

  • 1/2 pound frozen broccoli florets (we use organic Woodstock farms)
  • 1 tablespoon olive oil
  • salt and pepper to taste (or 1/2 tablespoon all purpose seasoning)

Notes

Kid Tip:
Let your kids dump in all the ingredients and mix as age appropriate.
 
For babies on solids but less than 12 months, omit the salt. 
This recipe is the fastest and easiest vegetable side dish that works with almost any meal. This is our g0-to on a busy day. We also use this recipe and other frozen vegetables with our Sweet Potato Bowls. Serve these with our favorite Green Goddess Dressing or Dairy-Free Ranch if you're wanting to add some more flavor.

Instructions

  • Preheat the oven to 400ºF. Line a baking sheet with parchment paper or Silpat. Spread the frozen florets out over the baking sheet (straight from freezer, they don't need to be thawed).
  • Drizzle olive oil over the florets and then sprinkle with seasoning. Toss to coat the florets and evenly distribute on baking sheet.
  • Roast in the over for 20 minutes. Then take the baking sheet out and use a spatula (or appropriate kitchen tool) to stir the broccoli. Return the baking sheet to the oven and roast for another 10 minutes, or until the broccoli is cooked as desired.
  • Serve (best served warm)
