Liv’s Favorite Kale Salad

This is our family’s favorite salad courtesy of our good friend, Lauren Tomlin. It’s been a staple in our house ever since she introduced it to us!

Liv’s Favorite Kale Salad

Yield: 8 servings

Ingredients

Dressing

  • 1/2 cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 2 cloves minced garlic
  • 1/2 tsp coarse salt

Salad

  • 2 large bunches of Tuscan kale (the flat kind)
  • 1/2 cup finely grated Parmigiano-Reggiano cheese
  • optional: avocado, croutons, nuts, dried fruit

Notes

Kid Tips:
  1. Measure out all ingredients and put in bowls for kids to easily dump in
  2.  For a sensory activity, have kids “massage the kale” with their hands (gloved)

Instructions

  • Prep the kale by removing the ribs and cutting or tearing the leaves into small shreds.
  • In a large bowl, whisk together oil, lemon juice, garlic and salt to taste.
  • Add kale to the dressing and toss to coat.
  • Optional but worth it: massage the dressing into the kale with gloves.
  • Add grated cheese plus your choice of optional ingredients and toss.

Notes

  • We love to make this for the week ahead! You can prep the kale and place in the fridge with paper towels to soak up excess moisture. Salad dressing can also stay in the fridge for up to a week– just make sure to remove from the fridge 30 mins before adding to kale!
