Easiest Pumpkin Oat Bites

This is our favorite snack recipe for kids one year and over — we’ve just added a pumpkin twist perfect for the holidays! Not only are these bites nutritious and super easy to make, they also make a great postpartum or on-the-go snack for you and the kids.

Easiest Pumpkin Oat Bites

Ingredients

  • 1 1/2-2 cups rolled oats (gluten-free oats work just as well)
  • 3 tablespoons ground flax meal
  • 3 tablespoons chia seeds
  • 1/2 teaspoon pumpkin spice or cinnamon
  • 1/2 cup nut butter of your choice (or sunflower butter for a nut-free option)
  • 1/2 cup pureed pumpkin
  • 1/4 cup honey or date syrup
  • 1 teaspoon vanilla extract

Optional:

  • 1/4 cup dark chocolate chips (mini size works best)

Notes

Kid Tip:
Let your child dump the ingredients into the bowl, help stir, and roll the bites into balls.
Reminder, honey isn’t safe for kids under 1 y/o, so this recipe is for 1+.
We love these oats because they are glyphosate free.  

Instructions

  • Place all ingredients in a large bowl and then mix well to combine. The mixture will be very thick and sticky.
  • Scoop mixture and then roll each between your palms until they are uniform in size.
  • Place oat bites onto a sheet tray.
  • Refrigerate and then eat within 7 days.
